Final Day of Cleanse – Day 5

Yayy, I made it to day 5. As of today I am down 9 pounds. The cleanse wasn’t too hard to follow, but I have to say, I can’t imagine going beyond 5 days of juicing and eating strictly vegetables. I am craving quinoa so bad, so I know thats on my plate for dinner tonight. A friend of mine had given me a recipe for a fried quinoa…similar to fried rice. It consists of egg whites and all sorts of yummy vegetables.

Erich is worried that I am turning into a vegetarian and now thinks were going to eat separate dinners haha. I keep reassuring him that no, I won’t be converting over to a herbivore, but I will be making sure that whatever is on my plate is 51% or more vegetables. Thankfully, I LOVE Indian food and a lot of Indian dishes are completely plant-based. The use of spices and herbs in Indian fare is pretty amazing. Erich is a fan of lentils, so that will be a new item in our household to purchase to and new recipes to try. I am excited!

One thing that I have decided to try commit to is…rather then wanting to spend money on material things, I am going to TRY to avoid that and spend that extra money on better quality foods for me and the fam. I understand locally grown organic vegetables, grass fed cattle, free range hens and chickens, and happy pigs are more expensive, but the long term affects of eating better quality veg and  meat would be cheaper in better health.

I sound incredibly preachy about this stuff, how annoying!! You know how it is, when you’re knee deep into something that you’re doing, thats all you can think about haha. In the end, I am glad I did this cleanse and realize I have more will-power then I had imagined.

Cleanse – Day 4

About 2 weeks ago, while my husband was away camping, I jumped onto NetFlix and played Sick, Fat and Nearly Dead. I don’t usually watch TV, but I enjoy background noise while doing other things. About 20 minutes into the movie, I was glued. I couldn’t stop watching what seemed to be an infomercial for a juicer. Not gonna lie, I used to LOVE infomercials. It didn’t help that my mother also enjoyed purchasing infomercial items.

Anyhow I was so inspired by this movie to do something better for myself. If you haven’t had a chance to watch it, its about 2 very overweight men who improve their health through juicing. This movie details what our bodies go through when we consume highly nutritional grub and the struggles our bodies go through when we eat crappy foods. It all made sense to me. The fact of the matter is, we consume more meat and dairy than necessary.  I, like most Americans, grew up on a diet heavy in those two items. I am 31 years old and really only eat vegetables as a side dish…a pretty small side dish.

Watching this movie made me realize how well I feed my 7 month old and how poorly (in comparison) I feed myself. Everything my daughter consumes is organic and is as fresh as can be. Why don’t I do the same for myself? Maybe because of convenience and my taste buds have been conditioned to love processed foods. She is such a good motivator for me to eat healthy and live long :)

So, today marks day 4 of 5 of my cleanse. I am doing 2 juices a day, plus eating raw fruit and vegetables. The juices I make are around 40-50oz and contain 100% fruit/veg.  I’ve been consuming a lot of beets, spinach, kale, a lot of different fruits…and so on. In just 4 days I have learned a few new recipes and also learned about some new plants/foods. Have you ever heard of the yuca root? I haven’t!!

In 4 days I am getting better with my juicer. It’s quite a task to cut all your produce and then clean the juicer. In all, it takes about a half hour to make a juice. Its time consuming, but really..its only 30 minutes..not that big of a deal. I can honestly say I feel pretty damn good. Without the consumption of additional sodium in my diet, my face doesn’t look as bloated and according to my scale I have lost 6 pounds. I know weight loss this fast is sketchy and everyone reminds me that when I am done with this cleanse I’ll gain it all back. Well, hopefully this won’t be a temporary thing…hopefully even after day 5 I continue to consume the foods that my body requires. I don’t want to set myself up for failure, so I’ll just do this nice and slow. So far, its working out for me. If anything, I’d like to adopt the Chinese way of eating. A lot more veg and meat is eaten in tiny amounts…that seems more realistic for me.

Last nights dinner is a perfect example of what you can eat while juicing. Sorry…quick side note: It’s hard for me to call what I am doing “juicing”, b/c I am still technically eating fruits and vegetables. I am basically not eating anything processed or any animal products…veganism! I’d prefer calling what I am doing a “plant-based” diet.  Back to dinner: Erich made guacamole that included, tomato, onion, lime, cilantro, avocado and jalapeño. I used my little mandolin to make perfect slices from a yuca root. I drizzled a bit of olive oil on the “chips” and added a tiny bit of sea salt. The chips baked for 30 minutes in a 450 degree oven. The chips were crispy and tasted almost like popcorn…they were freakin awesome. Chips and guacamole for dinner…awesome!. Funny thing about that is…normally that would be an appetizer for me! I was very satisfied with just that for dinner and I am sure my body appreciated the fact that everything I consumed was fresh and unprocessed.

I guess another reason I am doing this cleanse, is because for years and years I have eaten processed foods. It wouldn’t hurt to give my body a break for a few days and then take care of my body for a lifetime by eating healthier, right? I’ll continue to write more about this cleansing process…until then, adiós!

Braised Chicken Thighs

Since the husband has been on a camping trip with his buddies, I decided to take advantage of this time and cook some chicken thighs. He’s not a fan of the thighs, so we never make them. I, on the other hand, love chicken thighs. They are the darker, fattier part of the chicken and has about 100000x more flavor then the boob. Anyhow, my friend Jacq came over to spend the afternoon with me and Em, so I googled “braised chicken” and I followed the second recipe that came up. The recipe came from Stella Culinary and was posted by Chef Jacob Burton. I didn’t look too hard for a recipe…I stuck with this one, because it required minimal ingredients and this recipe allowed me to test out two cooking techniques that I have never done before; braising and blanching.

I always knew chicken thighs were cheap, but I guess I didn’t have a clue as to how cheap they really were. I bought an 8 pack of thighs for 4.36, which equates to about 55 cents a thigh. So much flavor for so cheap! This recipe called for two of my favorite things…garlic and mushrooms. Essentially, this recipe is pretty intense on the flavor scale!

Ingredients

  • 8 – Chicken Thighs (bone in, skin on)
  • 30 – Cloves of Garlic
  • 1lb – Cremini Mushrooms
  • 8oz – Balsamic Vinegar
  • 16oz – Chicken Stock
  • 40z – Butter
  • 1 – Bunch Spinach

I am not going to add the instructions here, b/c Chef Jacob Burton does such an excellent job explaining what to do and when. Click HERE for the recipe. Honestly, my house smelled so yummy and I couldn’t believe how delicious this dish was with such minimal and basic ingredients. I have to admit that after typing the ingredients down, I realized that I only added 2oz of butter (instead of 4) and it turned out awesome. I think the additional 2oz would just make the dish even more awesome.

Bruxie – Orange

I had no clue I worked 4 miles from Old Town Orange. A lot of my friends make fun of me for living in Costa Mesa. Not because its Costa Mesa, but because I never leave. Seriously, my little city is centrally located to so many awesome places to eat. We have fantastic markets to do our grocery shopping and several farmers markets to choose from. I rarely ever go to LA or even to neighboring cities like Long Beach, Huntington Beach or even venture to South County. I know…sad! Really, Costa Mesa is sort of awesome…not gonna lie.

Anywhoo…I was beyond thrilled when I learned that Bruxie is 4 miles from my office. I have heard about this place for a long time now and today I finally got to try it. I had the Buttermilk Fried Chicken Waffle sandwich with chili honey. It was really, really good! Not diet good, by any means…so you know it must be good :) I liked the whole set-up of the place. You walk up to a window to order and there are tables and counters outside for you to eat on/at. Bruxie is even equipped with those misters to cool you off while you eat. I knew I was going to like this place, just by seeing those misters.

It’s the perfect lunch time spot for you and some friends. I met up with 3 buddies and we were all really pleased with our lunch and service. The next time I make it to Bruxie (yes, there will be a next time) I am going to order the Roasted Mushroom and Goat Cheese Waffle sandwich…two of my favorite flavors in a waffle…heyell yeah! After eating all that good food…you can do some antique window shopping at the many antique shops right down the road. Oh, speaking of road (consider this fair warning) theres a round-about in Old Town Orange. Of course I was the idiot who was all sketchy about getting onto the round-about and almost got side swiped. I guess since its so close to work I’ll be visiting this awesome little neighborhood more as well as learn how to drive like a European. Maybe there is more than just Costa Mesa after all :)

Cafe Lotus – Newport Beach

I’ve been wanting to try Cafe Lotus for some time now and tonight I finally got my chance. It’s probably the only Vietnamese place in Newport Beach and lucky for me, only 3 miles from my house :)

It’s a cool little spot with tiled floors and maybe 12 tables inside. I love that the drink cooler has a glass door and you can see that it’s stocked just enough with canned bubbly water and a few sodas.

The menu was small and had the Vietnamese basics that any white person would know…I’m talkin about my husband..he’s the white part of this duo hehe. Anyhow, a small menu to me means that what they do serve, they must make it well. Of course spring rolls and pho were present. You can only order pho ga and umm…the one with beef…sorry, forgot the name. Pho ga is with chicken.

We ordered shrimp spring rolls, pork bahn mi and I got a rice plate with some pork. It was all great and priced really well! All that for 19 bucks. I don’t think anything is over 8 dollars on the menu. Oh, the people next to me ordered  smoothies that looked soooo good. I may have to go there this weekend and pick one up since it’s been really hot lately…yummy!

Chicken Taco Burgers

I thought he was kidding when he came up with this recipe. My response was, “what the what?!” But, I went with it and to my surprise…it was really freaking goood! Honestly, the chicken was moist, the flavors were fresh and very well seasoned and…dare I say…I now <3 Chicken Taco Burgers. To make this masterpiece he used a pound of ground chicken (makes 3 large burgers), 1 packet of taco seasoning, 1 egg, half an onion and cilantro and about a half a cup of bread crumbs to bind everything. To top the burgers, Erich made some salsa fresca. He chopped up some tomato, onion, jalapeno, cilantro, lime and salt and pepper to season. Thats it! Oh wait, he added some avocado to the burger…deelish!

All the seasonings in the taco packet made my taste buds do a happy dance. The burger remained juicy and tender and when I ate it…I felt good about this meal. Like it wasn’t some greasy cheese burger (that I love), but a more flavorful and healthy meal. I totally suggest you try to make this easy meal…this is going to be a repeat offender in my household.

Quick tip: when making the patties, chill the mixture first and at the last minute…form the burgers.

Lunch with Hubby

One of the perks about working in the heart of Santa Ana is the easy access to awesome restaurants. I work about 5 miles from my husband, so we often meet up for lunch. Today we went to one of the best little joints in Santa Ana called Lola Gaspar. I had a veggie burrito with salad and he ordered a shortrib burrito with fries. For lunch food..this was pretty damn good. The vibe is young and artsy, little succulent plants all over the place and great tunes. Definitely a lunch spot to frequent :)

Feeding Your Creative Side

I hope that ‘eating’ can also mean feeding any sort of creative desire. I am not a fantastic cook, I just mostly appreciate fantastic food…and I love to write about it. Since I haven’t eaten anything that has brought me to the point of OMG, I wanted to write about my other love. I love all things crafty and handmade. Lately, my creative-well had been dry, but over the weekend I took out my sewing machine and whipped up a big colorful pillow for Emma to crawl on and such. Seriously, the process of cutting the fabric, threading my machine and sewing the pieces together made me so happy and satisfied…sort of like food :)

Growing up, I was never drawn to doing anything creative…I was totally a lazy kid! It wasn’t until my late 20s that I discovered the satisfaction that I’d have from making things, be it a recipe or something for the home. Having Emma has certainly opened that channel of creativity for me, and for that I am so grateful. Being a mom is pretty much the most awesome job I’ve ever had. I am learning so many new things about myself and my husband and Emma all the time.

Well, I should probably try to write about food. Emma is now 6 months old and to date she has never had any processed vegetables or fruit. She does eat baby cereal, but when it comes to vegetables and fruit, I have steamed everything and pushed it all through a food mill. She loves yams, sweet potatoes, peas and squash. Her favorite is a combo of a peach and pear. I cut the peach and pear into wedges and cook them down in a small pot with a little water. After cooking for about 10 minutes, I take a hand blender to the fruit and puree the whole thing. It ends up becoming this gorgeous looking baby food…and was easy to make…and it makes me happy that I made it for her. The point of cooking the fruit down, is to break down the fiber…its still tough on little tummies, so cooking it down makes for easy digestion. Trust me, I am tired…I work 40 hours a week, but to see her eagerly want the food I have made, and knowing how good it is for her makes everything so worth it. I know a lot of people who have the Beaba BabyCook and they love it. My kitchen is so tiny, so having another appliance would just be too much! Plus, I sort of live by what Alton Brown always preached…he hated appliances that were unitaskers. Do you plan on pulling out the Beaba for yourself after the baby has outgrown eating mashed foods?

It does look kind of cool though…and it eliminates the additional mess of taking out a pot to steam and then use the food mill. This steams and blends all in one…yes, cool, I get it!

This is what I use, the KidCo Food Mill. It looks kinda lame, but it’s really awesome…and its only like 14 bucks, compared to the 150 dollar price tag for the Beaba. Again, I steam all veg and then push it through the mill. It’s way easy and fast to clean up.

Generous Pour – Capital Grille

**My apologies for constantly changing the look of my blog. I was having major problems with the last layout…sooo I had to change it up. Last time – I swear!

I had never been to an actual ‘foodie’ event before. I don’t think I’d even call myself a ‘foodie’. I feel like you’d have to know a ludicrous amount of fun sounding adjectives to be able to talk about food…the way foodies do. Here is one thing that I do know, I love when I eat or drink something and I end up wanting to write about it. Go figure. Anyhow, earlier in the week I got to do something really cool. My friend Selene invited me to attend a wine event, called the Generous Pour. It was co-hosted by Anita Lau and held at the Capital Grille in SouthCoastPlaza. I felt so fancy walking into the enclosed patio, being greeted by a suited-up server with a tray full of sparkling wine. YUMMMY!

Master Sommelier George Miliotes was the special guest and the one who hand-selected the 9 wines that were being paired with some insanely delicious food. I have to admit, I am a wine racist. I typically only like white wines, yes…I said it. However, my eyes were opened to the tastyness of the reds. I even tried a port wine. Wow, where have I been? I need to get my hands on a bottle of that stuff! So yummy and concentrated that its only served in tiny cute glasses.

Each food station was paired with a wine that George selected. There were lamb chops, served lolly-pop style. Filet mignon served with a mushroom sauce. These delicious little beef burgers served on a brioche bun. The fruit station was gorgeous. Melon with mint, served of course with quality prosciutto. Strawberries, grapes and cheese…lots of it! It was difficult not going back for 2nds or 3rds.

Did I die and go to food and wine heaven? I think so! To finish the evening truffles were served with a port. Ugh, truffles are a chocolate lovers best friend. A truffle and a sip of port…grown-up dessert to the max! So decadent, rich and awesome.

Here are a list of the wines. I suggest you give em’ a go. My favorites were the Sparkling Wine, Albarino, Pinot Noir and Monastrell. I was surprised to see that all of these wines are decently priced. From around 8 dollars to 20+…not bad at all.
